You can also use plain Greek yogurt and sweeten to taste with maple syrup.


  • 1/2 cupvanilla Greek yogurt
  • 1/2 cupmashed roasted sweet potatoes
  • pinchpumpkinpie spice orcinnamon


  1. Add the ingredients to a standardblenderand blend smooth. Or into a wide-mouth Mason jar or large measuring cup and blend smooth with an immersionblender.
  2. Serve cold.


Store any leftovers in anairtight containerin the fridge for 3-5 days.

Plan to prepare your sweet potato ahead of time and let it chill in the fridge before you make the pudding.

Use thick Greek yogurt for the best texture.
